Gingerbread Doughnut Muffins



The flavors of gingerbread cookies and the simplicity of muffin preparation come together in these delicious treats called gingerbread doughnut muffins. These muffins are great as a cozy snack or for breakfast.

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/4 cup unsalted butter, melted
  • 1/4 cup molasses
  • 1/4 cup plain yogurt
  • 1/4 cup milk
  • 1 egg
  • 1/2 teaspoon vanilla extract

Instructions:

Preheat your oven to 350F 175C and grease a muffin tin or use muffin liners

In a large bowl, whisk together the flour, sugar, baking soda, baking powder, ground ginger, ground cinnamon, ground nutmeg, and salt

In another bowl, mix together the melted butter, molasses, yogurt, milk, egg, and vanilla extract

Pour the wet ingredients into the dry ingredients and stir until just combined

Be careful not to overmix

Spoon the batter into the muffin tin, filling each muffin cup about 2/3 full

Bake in the preheated oven for 15-18 minutes or until a toothpick inserted into the center comes out clean

While the muffins are still warm, you can dip them in a mixture of sugar and cinnamon for a doughnut-like coating if desired

Let the muffins cool before serving
