Ingredients:
- 1 1/2 pounds ground beef
- Salt and pepper to taste
- 4 ounces cheddar cheese, cut into 4 equal pieces
- 4 hamburger buns
- 1 cup shredded green cabbage
- 1/2 cup thinly sliced red onion
- 1/4 cup apple cider vinegar
- 2 tablespoons sugar
- 1/2 cup mayonnaise
- 2 tablespoons Dijon mustard
- 1 cup vegetable oil for frying shallots
- 4 shallots, thinly sliced
- Lettuce leaves for garnish optional
- Tomato slices for garnish optional
Instructions:
Preheat your grill to medium-high heat
Divide the ground beef into 8 equal portions and shape them into thin patties
Season each patty with salt and pepper
Place a piece of cheddar cheese in the center of 4 of the patties
Top each cheese-covered patty with another patty and seal the edges, creating 4 stuffed burger patties
In a bowl, combine the shredded cabbage and sliced red onion
In a separate bowl, mix the apple cider vinegar and sugar until the sugar dissolves
Pour this over the cabbage and onion mixture and toss to combine
Set aside to pickle for at least 15 minutes
While the slaw is pickling, mix the mayonnaise and Dijon mustard in a small bowl to create a sauce for the burgers
Heat the vegetable oil in a skillet over medium-high heat
Add the sliced shallots and fry until they are crispy and golden brown
Remove them from the oil and drain on paper towels
Grill the stuffed burger patties for about 4-5 minutes per side, or until they reach your desired level of doneness
Toast the hamburger buns on the grill for a minute or two until they are lightly browned
To assemble the burgers, spread the mayo-Dijon sauce on the bottom half of each bun
Place a stuffed burger patty on top, followed by a generous portion of pickled slaw and a handful of fried shallots
If desired, add lettuce leaves and tomato slices for extra freshness and crunch
Top with the remaining half of the bun and serve immediately
