Pan-Fried Salmon Burgers with Cabbage Slaw and Avocado Aioli



Instead of regular beef burgers, these pan-fried salmon burgers are tasty and good for you. A cool cabbage slaw and a creamy avocado aioli go well with them to make a complete meal.

Ingredients:

  • 1 lb fresh salmon fillet, skinless and boneless
  • 1/4 cup breadcrumbs
  • 1/4 cup red onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1 egg, beaten
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 4 hamburger buns
  • 1 cup green cabbage, thinly sliced
  • 1/2 cup red cabbage, thinly sliced
  • 1/4 cup carrot, grated
  • 1/4 cup mayonnaise
  • 1 ripe avocado, mashed
  • 1 tbsp lemon juice
  • 1 tsp Dijon mustard
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • 1/4 tsp cayenne pepper optional

Instructions:

Cut the salmon fillet into small pieces and place them in a food processor

Pulse the salmon until it becomes a coarse mixture

Transfer the salmon to a bowl and add breadcrumbs, red onion, minced garlic, chopped parsley, beaten egg, salt, and pepper

Mix well to combine

Divide the mixture into 4 equal portions and shape them into burger patties

Heat olive oil in a skillet over medium-high heat

Add the salmon patties and cook for about 3-4 minutes per side, or until they are cooked through and golden brown

While the salmon burgers are cooking, prepare the slaw by combining green cabbage, red cabbage, and grated carrot in a bowl

In a separate bowl, make the avocado aioli by mixing mashed avocado, lemon juice, mayonnaise, Dijon mustard, garlic powder, paprika, and cayenne pepper if using

Toast the hamburger buns in the skillet or toaster until they are lightly browned

To assemble the burgers, spread a generous amount of avocado aioli on the bottom half of each bun

Place a salmon patty on top of the aioli, followed by a portion of cabbage slaw
