Ingredients:
- 1 1/2 cups fresh strawberries, hulled and chopped
- 1 1/2 cups all-purpose flour
- 1 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup whole milk
- For the Fresh Strawberry Frosting:
- 1/2 cup fresh strawberries, hulled and pureed
- 1/2 cup unsalted butter, softened
- 4 cups powdered sugar
- 1 tsp vanilla extract
- Pinch of salt
Instructions:
Preheat your oven to 350F 175C and line a cupcake pan with cupcake liners
In a blender or food processor, puree the 1 1/2 cups of fresh strawberries until smooth
Set aside
In a medium bowl, whisk together the all-purpose flour, baking powder, and 1/4 tsp of salt
Set aside
In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy
Add the eggs one at a time, beating well after each addition
Stir in the vanilla extract
Alternate adding the dry flour mixture and the pureed strawberries to the wet ingredients, beginning and ending with the dry ingredients
Mix until just combined
Gradually add the whole milk and mix until the batter is smooth and well combined
Spoon the batter into the cupcake liners, filling each about 2/3 full
Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center of a cupcake comes out clean
Allow the cupcakes to cool in the pan for a few minutes, then transfer them to a wire rack to cool completely
For the Fresh Strawberry Frosting: In a mixing bowl, cream the softened butter until smooth and fluffy
Add the pureed strawberries, powdered sugar, vanilla extract, and a pinch of salt
Beat until the frosting is creamy and well combined
Once the cupcakes are completely cool, frost them with the Fresh Strawberry Frosting
Garnish with additional chopped fresh strawberries if desired
