Ingredients:
- For the Crust:
- 1 cup almond flour
- 1/4 cup cocoa powder
- 3 tablespoons coconut oil, melted
- 2 tablespoons maple syrup
- 1/2 teaspoon vanilla extract
- For the Filling:
- 2 cups frozen cherries, thawed
- 1 cup full-fat coconut milk
- 1/4 cup raw honey
- 1 teaspoon vanilla extract
- For the Chocolate Shell:
- 1/4 cup dark chocolate chips
- 1 tablespoon coconut oil
- For Garnish:
- Fresh cherries
- Shredded dark chocolate
- Chopped almonds
Instructions:
For the Crust: In a bowl, combine almond flour and cocoa powder
Stir in melted coconut oil, maple syrup, and vanilla extract
Press the mixture into the bottom of a tart pan and place it in the freezer to set while you prepare the filling
For the Filling: In a blender, combine thawed cherries, coconut milk, honey, and vanilla extract
Blend until smooth and creamy
Pour the cherry mixture over the crust in the tart pan
Place the tart back in the freezer to set for at least 2 hours or until firm
For the Chocolate Shell: In a microwave-safe bowl, melt dark chocolate chips and coconut oil in 30-second intervals until smooth
Remove the tart from the freezer and drizzle the chocolate shell over the top
Work quickly as it will harden fast
For Garnish: Decorate the tart with fresh cherries, shredded dark chocolate, and chopped almonds
Slice and serve immediately or keep it frozen until ready to enjoy
